Chef Nieves Barragán opened Sabor in 2017 and the London restaurant, which showcases the diversity of Spanish cooking, has been a labour of love. “Making Sabor has been one of the most challenging things I have ever done,” says Nieves, whose passion for cooking dates back to a childhood helping her mother in the family kitchen. “Come here at 8 o’clock in the morning, leave at 1 o’clock in the morning – it doesn’t matter. When you see the happy customers – that’s what inspires me every day.”

That inspiration has led to a Michelin star for Sabor, an achievement that is testament to hard work, clear vision and a thirst for adventure.

It also takes an adventurous spirit to wear the suede Almington jacket in a restaurant kitchen – but Nieves is passionate about style. “Belstaff is quality,” she says. “It’s elegant, and it makes you feel good. Style means personality,” she continues, “It’s who you are. When I’m plating the dishes, that is my style… that is my personality.”

For Nieves, it seems, style isn’t just something you buy – it’s something you own.
